Reducing the water loss of horticultural and arable products during long term storage.

ABSTRACT

Attention was focused on the effects of evaporator control on water loss. Using a computer calculation of the heat- and water-balance in a cold store it was found that on/off switching of the evaporators with short periods of operation and periods of non-operation could give a better performance than the frequently used method of restricting water loss by means of cooling-capacity control. Reduced cooling capacity inevitably leads to a longer cooling-operation time and a greater effect on water loss. The theory concerning the effect of water loss by controlling the evaporators was verified using 2 small storage rooms with 3.5 t Golden Delicious and Elstar apples during a 180-day storage experiment. An additional reduced absolute weight loss of 1% was achieved based on weight measurements of product samples from the cold stores. Reducing the water loss by an extra 30% was possible using a simple on/off control cooling system equipped with a good-quality air cooler. In practice, the adjustment of

the air-temperature difference between the on and off period has to be increased. It was found that the temperature of the product was hardly influenced by the fluctuating air temperature. Humidification of the air after a cooling period, and wetting of the boxes and concrete floor, resulted in a diminished water loss.
