บทคัดย่อ

Nondestructive evaluation: detection of external and internal attributes frequently associated with quality or damage.

Techniques for non-destructive assessment of fruit and vegetable quality are presented by technology area. These are: optical evaluation of surface appearance and internal attributes; acoustic or ultrasonic evaluation of firmness, texture and maturity; x-ray and gamma ray evaluation of solids distribution and density; nuclear magnetic resonance evaluation of internal features and composition; electrical property evaluation; far-infrared thermography evaluation of surface damage; fluidized bed evaluation of density; pseudoproduct (instrumented sphere) and biosensors. The physics of each technology area and its applications are discussed.
