Quality and shelf life comparison between off-white and white hybrids (U1 and U3) of Agaricus bisporus.

Postharvest quality characteristics (colour, cap opening, stipe elongation, FW/DW changes and bacterial flora) of the off-white (U1) and white (U3) hybrid strains of A. bisporus were evaluated during storage at 12 deg C for 10 days. No significant differences in colour values were found between the strains on the day of harvest. However, on day 4 of storage, discoloration was greater in the off-white than in the white hybrid. Rate of maturation and cap expansion in both strains increased continuously during storage. Differences in rate of stipe elongation were not statistically significant. The gill and upper stipe gained more weight, while the cap and lower stipe lost more weight, in U3 than in U1 hybrids. However, the quality and shelf life of the hybrid strains did not differ significantly.
