Is there any relationship between the flesh mineral content and the peel hexane extracts of apple fruit?

The mineral composition of apple fruits with or without symptoms of scald is different and seems to indicate that Ca could prevent scald whereas K and Mg could enhance it. It has been suggested that the antioxidant activity of the hexane extract of apple peel (evaluated by OD (optical density) at 200 nm) could be used for predicting scald susceptibility. Apple peel discs (cv. Jonagold) were extracted with pure hexane and fruit mineral composition was determined. Preliminary results showed that some correlations between these parameters existed which were either expected (e.g. more Ca = less conjugated trienes, more K or Mg = more conjugated trienes) or unexpected (e.g. more Ca = less antioxidant activity). It was concluded that there are correlations between mineral concentrations and the antioxidant activity and/or the alpha -farnesene and conjugated triene concentrations of the peel but further research is necessary to understand the scald problem.
