Effect of picking date on quality and sensory characteristics of pears after storage and ripening.

Doyenne du Comice and Conference pear fruits were harvested on 3 dates (1st harvest date being the commercial harvest date) from 2 localities. Samples were analysed for size, firmness, SS content and skin colour (only Conference). After cold storage either at -1 deg C in air or at -0.5 deg in controlled atmosphere (CA) (3-4% O2, 2-3% CO2), fruits were evaluated for decay and scald and quality parameters (size, skin colour, firmness, SS content and acidity). Sensory tests were carried out after storage on fruits ripened at room temperature and at the same time samples were analysed for volatiles using GC/MS. At harvest the traditional maturity indices were not significantly different between harvest dates. Fruit size, juiciness after ripening and % decayed fruit increased with harvest time. Mature fruits of both cultivars had better sensory quality but were more susceptible to decay. Rate of ripening was different, within the same cultivar, for fruits from different sites of origin or of different maturity.
