Effect of controlled atmosphere and waxing on the postharvest life of cherimoya (Annona cherimola Mill.) cv. Bronceada.

Harvested cherimoya cv. Bronceada fruits were treated or not treated with wax and stored at 10 deg C and 85-90% RH under various CO2 and O2 concentrations (normal atmospheric conditions or 5% O2 + 0 (i.e. 0.03), 5 or 10% CO2). After 21 or 28 days, fruits were transferred to normal atmospheric conditions at 10 deg for 2 days followed by 3 or 5 days (depending on fruit softness) at 18 deg to simulate shelf storage. Waxing conserved peel colour, increased pulp firmness and reduced fruit decay and, to a lesser extent, dehydration. In waxed fruits stored for 12 days, pulp firmness was greater in the 5% O2 treatments than in normal-atmosphere controls. Abnormal ripening and dark brown spots in the pulp occurred after shelf storage in approx equal to 25% of fruits (waxed or unwaxed) stored in 10% CO2. At this stage, the incidence of fungal decay was greater in unwaxed than waxed fruits for most atmosphere treatments. It was concluded that waxed cherimoya cv. Bronceada fruits can be stored at 0% CO2 + 5% O2 for 3 weeks without visible deterioration.
