Effect of postharvest storage conditions on chemical parameters in white and green asparagus.

Spears of the cultivar Cipres were held for up to 21 days (1) at 4-6 deg C and 90% RH, (2) in modified atmosphere (polyethylene bags), or (3) in CA (enriched with 10% CO2). The spears were sampled fresh and at intervals of 3 days during storage for DM, pH, titratable acidity, soluble solids, reducing sugar and vitamin C. The data are presented graphically. The decrease in vitamin C content during storage was much more pronounced in green than in white asparagus. Vitamin C content was generally lowest in treatment (2) and highest in (3). Generally, spear quality was poorest in (1).
