Ethylene evolution rates from Gala, Oregon Spur Delicious and Empire apple fruits were measured in 1990-91 and correlated with commonly-used maturity indices (ground colour, firmness, starch, soluble solids and % red colour). Ethylene evolution of Gala fruits increased from less than or equal to 0.1 to more than or equal to 2.0 mu l kg-1 h-1 during maturation. Higher evolution rates were not measured until fruits were detached. During 1991, ethylene evolution rates increased slowly during maturation in all 3 cultivars; typically, 2-3 weeks elapsed between measured rates of 0.1 and 2.0 mu l kg-1 h-1. While all measured maturity indices were significantly correlated with ethylene evolution rate, the greatest correlation was found between ethylene rate and starch index. Using these data, ethylene-based starch iodine test charts were developed for Gala and Empire apples.
