Physical methods for detection of physiological changes in apples during storage.

Fruits of apple cultivars Jonnee, Jonathan, Jonagold, Redspur, Gloster and Mutsu [Crispin] were harvested at 3 stages of ripeness and samples were analysed for physical characteristics and chemical composition. Fruits were then stored at 2-3 deg C for 5, 6 or 7 months and samples were analysed for pectic substances, juice, refractive index, pH, DM and acid content. Samples were also subjected to near-infrared transmission spectroscopy (NIT) and analysis by conductimeter (for characterization of ion leakage and current intensity). DM, pectins, titratable acidity, firmness, pH and juice refraction were used as reference variables for calibration of NIT. The accuracy of the calibrations was independent of cultivar and was found to decrease during storage. Ion leakage increased with storage duration. There were significant differences in ion leakage among cultivars but not among harvest dates. Data were measured using mathematical equations derived to model the kinetics of ion transport changes during fruit storage. It was concluded that the methods used in this study appeared to characterize the physiological changes in apples during storage.
