Effect of the picking date on the apple storage quality.

The effect of harvest date on physical, chemical and rheological properties of Jonnee, Jonagold, Jonathan, Redspur, Gloster and Mutsu [Crispin] apple fruits was studied. Characteristics measured were fruit disorders, weight, volume, juice refraction, titratable acidity, colour, DM, organic acids and sugars content, pectins, firmness, flow limit and damage limit of the fruit. The latest harvest date resulted in a high incidence of disorders in Jonathan fruits. Firmness decreased continuously especially in the first 5 months of storage. Malic and total acid contents were low in the later harvested fruits but the trends were different during storage. Acid content decreased in the first period of storage, however, total acidity increased slowly during the last 2 months of storage. During 5-7 months' storage, ion (electrolyte) leakage increased significantly by 10-15%. These results for ion leakage are discussed relative to membrane transport processes occurring during fruit storage.
