Effects of harvest time during the day and temperature on the respiration rates of shii-take (Lentinus edodes Sing.).

Lentinus edodes [Lentinula edodes] fruiting bodies were harvested at various times of the day and their postharvest respiration rates measured. Fungus temperature was always lower than ambient air temperature, and this difference was greater in the morning than in the afternoon or evening. After transfer to an incubator at constant temperature (25 deg C), fungus temperature increased initially, but then decreased and gradually reached equilibrium with the ambient temperature. The initial respiration rates of fungi decreased as the time of day for harvesting became later. The postharvest fungal respiration rate tended to increase with harvest temperature. It was concluded that for optimum quality, harvesting should be carried out at low temperatures.
