Biplot presentation of the physiological-biochemical characterization and the sensorial quality of minimally processed leek stored under modified atmosphere.

Leeks (cv. Arkansas) were minimally processed, packaged in a permeable plastic film and stored at 4 deg C for 10 days. Biochemical characteristics, microbial growth and sensory properties were measured during storage. Canonical correlation and factor analysis procedures were applied to these data and the results are presented in a biplot. The localization of the datapoints in the biplot gave a picture of the overall quality of the product at the time of the evaluation. A high correlation was found between the sensorial and biochemical-microbiological data sets and, since factor analysis applied on the set of objectively measured data alone resulted in a comparable distribution of the datapoints, it was concluded that the physiological-biochemical characterization of the minimally processed leek product reflected very well its sensorial quality.
