Production, processing and utilization of cassava in Ecuador.

The production, processing and use of cassava in Ecuador are described. It is an important product owing to its use in both human and animal diets and for its industrial use, in products such as starches, flour, bran, rum and pulp. The area under cassava production has amounted to 20 000 ha in recent years, being easily adaptable to any area and a high-yielding crop. Major institutions have supported the development of the crop through programmes of research, training, technology transfer and technical assistance to production as well as postharvest. The potential demand for the crop surpasses current supply. A need still exists for more indepth research on processing technology. Details are also given of prices received and credit availability.
