Experience of the ICTA agroindustrial project on primary processing of potato and other vegetables.

The agroindustrial project of the ICTA, which has evaluated technology for potato processing in Guatemala since 1984, is described. The project aimed at generating or validating techniques to reduce postharvest losses, as well as at promoting or consolidating strategies for stabilizing the supply and prices of potatoes throughout the year. The achievements of the project were: development of techniques for dehydrating vegetables at three production levels (home, village and semi-industrial); production of potato flour to sell directly to the public; development of a technique for dehydrating garden vegetables and formulation of these with dehydrated potato squares for soup making; development of a technique to dehydrate fruits and formulation of a mixture of dehydrated fruits for punch or tea making; creation of recipes for each dehydrated product, which had good market response; and determination of a technique for determining the cooking time of potatoes. It is recommended that to implement similar projects, it is necessary to know the market to invest resources in products which are well accepted, and to secure adoption by technology transfer. Hybrid systems which guarantee quality and volume of production are required to produce sun-dried products commercially.
