Introduction and development of potato products in Peru: a managerial experience.

The results and lessons are presented of the Andean Potato and Grains Processing Project carried out in Peru by IDEAS (Centre for research, documentation, education, assessment and services) in 1985-90, which aimed at showing the commercial and technical feasibility of processing foods derived from potato in small scale rural businesses for low income consumers. The company IDEAGRO S. A. was created from the project, and uses technology developed from a proposal made by the postharvest programme of CIP (International Potato Center). The project consisted of the setting up four small processing plants for potato and cereals. Details are given of the product development, market, and organization and technology of processing of potato and food mixes. The different aspects of business management in the operational phase are analysed, including the organization and administration of the business; supply; production; marketing and sales; distribution channels; promotion and publicity; prices; and financing and profit. The main result was the development of new products, including: M5, M6, Ricarina, Chicholac, besides flours and grains, and potato cream and semolina. The main lessons obtained included: the need to sell at least part of the product to high-income consumers to obtain profit; a research phase is required to progress from the technical/productive phase towards commercial success; and the investment return on a new product depends fundamentally on the proportion and efficient management of the working capital.
