Effect of harvest maturity on physical and chemical characteristics of carambola (Averrhoa carambola L.).

Fruits of the cultivar B17 (which was introduced in Malaysia in 1988 and is sweeter than the main cultivar, B10) were harvested at various colour indices: light green, yellowish green, more yellow than green, more orange than yellow, and full orange. Harvesting began 9 weeks after fruit set and ended 13 weeks after fruit set. Harvesting for fresh consumption was carried out from week 11 to week 13. The physical properties investigated were length, width, weight and volume; chemical properties comprised TSS, pH, total titratable acidity, total sugars and total ascorbic acid content. Sensory evaluations for sourness, colour, sweetness, texture and overall acceptability were also carried out. Measurements were made at weekly intervals. The TSS, pH, total sugars and total ascorbic acid content increased with maturity whereas total titratable acidity declined. The causal regression relationships of chemical variates on harvest maturity are presented.
