Post-harvest technology of spices: pre-treatments, curing, cleaning, grading and packing.

A review is presented of the postharvest technology of many spice plants, including cardamoms (Elettaria cardamomum), ginger (Zingiber officinale), cinnamon (Cinnamomum sp.), cassia (Cinnamomum cassia [C. aromaticum]), garlic, saffron (Crocus sativus), turmeric (Curcuma longa), Vanilla beans and pimento berries (Pimenta dioica). Aspects of postharvest processing activities specific to individual spice plants are briefly covered. These activities include washing, peeling, pricking, blanching/scalding, bleaching, curing, drying, cleaning, grading and packing. Problems associated with these activities and the relative advantages and disadvantages of the various processes are also discussed.
