บทคัดย่อ

Lychee (Litchi chinensis Sonn.) pericarp browning.

This review discusses postharvest pericarp browning in L. chinensis including the roles of polyphenol oxidase [catechol oxidase], sulphur dioxide, desiccation, anthocyanins, ascorbic acid, ethylene and pericarp pH.
