บทคัดย่อ

The use of spectrophotometry to determine colour development in fruit during post harvest maturing.

Pear varieties Blanquilla and Decana de Comice [Doyenne du Comice], and apple varieties Golden Delicious and Starking were studied during their postharvest maturing period. Reflectance spectra from the skins of 5 fruits of each variety were studied. The curves obtained were statistically treated and a group of wavelengths was selected and subjected to discriminant analysis. The parameters which best discriminate fruit reflectance variation during the postharvest maturing period were identified.
