Psychrometrics and post harvest operations.

The value of commercial vegetable production in the state of Florida is >1.5 billion dollars annually. Most of these crops are produced for the fresh market and the ambient environment to which the freshly harvested vegetables are exposed significantly affects their postharvest life. This paper discusses the interrelationships of psychrometric variables, considers their effects on perishable commodities, and reviews their management and use as a management tool in cooling and storage. The variables comprise air temperature, RH, RH:vapour pressure ratio, dew point temperature, dry bulb temperature and wet bulb temperature.
