Induction of bitter pit-like symptoms on apples by infiltration with Mg+2 is attenuated by Ca+2.

Golden Delicious apples were vacuum-infiltrated with Mg2+ and Ca2+ alone or in combination. Treatment solutions contained 0.02-0.36 M MgCl2 and/or 0.01-0.04 M CaCl2, plus 0.4 M sorbitol. Fruits infiltrated with Mg2+ alone and stored for 2 weeks at 20 deg C developed bitter pit-like symptoms that were positively correlated with Mg2+ concentration infiltrated. Infiltration with Ca2+ induced no bitter pit-like symptoms. Bitter pit symptoms induced by Mg2+ were decreased, or did not develop, when Ca2+ was included in the infiltration medium. The endogenous Ca2+ concentration of individual fruits was inversely related to the number of lesions induced by Mg2+ infiltration.
