Aloe vera: chemical and physical properties and stabilization.

Investigations are reported on the rheological properties of Aloe vera (A. barbadensis) gel, its chemical composition, and the effects of growing conditions, time of harvest and postharvest treatment on gel properties. Over 100% variability was found in the content of polysaccharides and other constituents such as anthraquinones, as well as in the apparent viscosity. Viscosity was related to the polysaccharide content. Gel composition varied widely in plants grown under water stress but was more uniform under irrigated conditions. Polysaccharide composition was little affected by growing conditions and time of harvest. The fresh gel lost its apparent viscosity a short time after extraction, as a result of enzymatic degradation. The rate of degradation was influenced by both growing conditions and time of harvest. A method was developed for prolonging the shelf life of the gel, without affecting its natural properties; this was based on the addition of natural polysaccharides with a synergistic effect on the rheological characteristics.
