Induction of ethylene synthesizing competency in Granny Smith apples by exposure to low temperature in air.

Preclimacteric fruits of cv. Granny Smith were (a) held continuously in air at 20 deg C or (b) held in air at 0 deg for 2, 4, 8, 16 or 32 days before transfer to air at 20 deg . Fruits from both treatments were assessed periodically for rates of C2H4 and CO2 production and for 1-aminocyclopropane-1-carboxylic acid (ACC) content. Fruits kept continuously in air at 20 deg entered the autocatalytic phase of C2H4 production after 22 days while fruits chilled for 2, 4, 8, 16 or 32 days before ripening at 20 deg began autocatalytic C2H4 production after 16, 14, 2, 0 and 0 days at 20 deg , respectively. ACC levels in peel tissue from fruits kept at 0 deg C for 8 days or less remained low when transferred to air at 20 deg whereupon the ACC level increased greatly. Fruits kept at 0 deg for >8 days accumulated low ACC levels which were rapidly converted to C2H4 as indicated by a high and sustained C2H4 production rate.
