Research on French beans. Brown discoloration is possible also in a fine summer.

In trials during 1990 (when the summer was warm and dry) with the French bean (Phaseolus vulgaris) cultivars Arena, Masai and Montano, factors affecting the incidence of postharvest browning were investigated. The wet-harvested beans were washed with water at 3 deg or 20 deg C, then dried immediately or after 6 or 12 h, or not dried. They were then either shaken or not, to simulate transport. With all cultivars the incidence of brown discoloration 1 week after harvest was lowest with beans that were dried 6 h after washing, followed by shaking. The water temperature made no significant difference. Masai was the least susceptible to discoloration.
