Tolerance and responses of fresh fruits to oxygen levels at or below 1%.

A number of fruits such as pears, stone fruits, blueberries [Vaccinium] and strawberries tolerate O2 levels between 0.25% and 1% for up to 10 days at 0 to 5 deg C. Apples can tolerate these low O2 atmospheres for a longer period. Beneficial effects of exposure to such low O2 atmospheres include inhibition of respiration, ethylene production/action, colour development and softening; maintenance of soluble solids content, titratable acidity and amino acids; and control of some physiological disorders, decay and insects. Detrimental effects include accumulation of ethanol and acetaldehyde to concentrations that cause off-flavours, enhancement of some physiological disorders, and incidence of low O2 injury. It is suggested that the most promising application for O2 levels at less than or equal to 1% is to expose fresh fruits to low O2 atmospheres for short periods to replace chemical treatments for postharvest insect control to meet quarantine requirements.
