Evaluation of post-harvest losses and quality changes in tomatoes in Borno State, Nigeria.

Ripe tomatoes (Roma VFN cultivars) from 2 producing areas were randomly collected from large numbers awaiting packaging at the farm gate. A basket load (approx. 35 kg) was also collected at random from the wholesale market. At the farm gate, tomatoes were sorted immediately by state of damage. All samples were then sorted into 2 major categories, marketable and unmarketable. Marketable samples were further sorted into 4 groups, physiologically damaged, pathologically damaged, mechanically damaged and undamaged (as controls). Samples from each group were analysed for total ascorbic acid, reduced ascorbic acid, dehydroascorbic acid, titratable acidity and TSS. Data were statistically analysed and the results are tabulated. A high percentage (79 and 80%) of tomatoes were found to be free from defects at the 2 farm gates while 50 and 54% were found to be undamaged after being transported to the market. Irrespective of treatment and source, physiological damage accounted for most of the damaged samples. Total ascorbic acid and reduced ascorbic acid were significantly higher in undamaged tomatoes. A similar trend was seen in % TSS and % titratable acidity between undamaged and damaged tomatoes. Dehydroascorbic acid and pH were higher in the damaged tomatoes.
