Suitability of various indices for assessing ripeness in mango.

Studies were made of the fruit development of mangoes, cv. Sensation, assessed at intervals during a 9-week period starting 7 weeks before the general harvest date, and of cv. Kent, assessed postharvest at 3-day intervals during holding at 20 deg C for 12 days until the eating-ripe stage. The indices used were pulp penetration pressure, degrees of shoulder development, skin and pulp coloration and TSS contents. Data are presented on changes in the various indices and their relationships with the penetrometer values. Pulp penetration pressure was found to be the best index for assessing fruit ripeness.
