Factors affecting protein quality and contents of antinutritional factors (ANFs) in legumes, crucifers and some other agricultural crops; a literature review.

The literature on antinutritional factors in crops of importance as livestock feed and capable of being grown in the Netherlands was reviewed. The concentration of these substances in the final product may be reduced by agronomic means, plant breeding and postharvest treatment. Effects of N and S nutrition, acid rain and air pollution by SO2 were examined. Data were particularly sought on glucosinolates in the seeds of brassicas and lectins, protease inhibitors, alkaloids, tannins (flavonoids and other polyphenols), vicine and convicine in legume seeds, with emphasis on Vicia faba. The main gaps found in the literature concerned the effects of optimizing S nutrition on the contents of lectins, protease inhibitors, glucosinolates and condensed tannins; the effect of suboptimal conditions on the content of flavonoids and tannins in seeds of V. faba and the relationship between their contents in leaves and seeds; and the effect of light quality and intensity on tannin formation in seeds and leaves of V. faba.
