Studies on the internal browning of apple fruits caused by excessive boron application. IV. Correlation between internal browning of fruits and polyphenol oxidase activity.

Borax was applied to apple cv. Fuji trees in 2 orchards at 10-500 g/tree. Polyphenol oxidase (PPO) [catechol oxidase] activity was determined in the fruits during storage from 15 Nov. to 22 Feb. Increasing levels of B increased total and specific PPO activity during storage. There was a strong positive correlation between PPO activity and internal browning. PPO activity was greater in the core of the fruit than the flesh. Five isoenzymes were detected using polyacrylamide gel electrophoresis, 2 of which stained more intensely at higher levels of B.
