Modified atmosphere packaging of mushrooms - review and recent developments.

Good and consistent mushroom quality is essential for high value sales and is the consequence of growing technique, picking and postharvest management. Low quality mushrooms resulting from poor growing techniques and picking practices can be selected out but thereafter quality is dependent on good postharvest practices. Modified atmosphere packaging (MAP) of mushrooms has been shown successfully to delay senescence and maintain quality after harvest in an experimental system. For MAP to be commercially viable, the following factors must be assessed: optimal and effective gas concentrations (CO2 and O2) for delaying mushroom senescence; interaction of MAP with cooling; presence or absence of free water in packs; the possibility of anaerobiosis e.g. by over-labelling the film; and the cost-effectiveness of MAP by enhancing storage-life. Two MAP systems for mushrooms have been tested and data on the above factors are presented and discussed in relation to the mechanisms of action of MAP.
