Postharvest behaviour and chilling injury in babaco fruit.

Ethylene production was measured in greenhouse-grown babaco (Carica heilbornii nm. pentagona) fruits throughout fruit development (between Feb. and Aug.). Ethylene production was high during the early stages of fruit development, decreased during later stages, and rose again when 40-50% of the fruit surface had turned yellow. Fruits harvested in Aug. were stored at 1, 4 or 8 deg C and 80% RH for periods of 1, 2 or 3 weeks. After removal from storage, the fruits were held at 20 deg for 1 week. The ripening site appeared to be localized in the equatorial part of the fruit. Fruits developed chilling injury after 1 week at 1 deg plus 1 week at 20 deg . Fruits could be stored for 1 week at 4 deg plus 1 week at 20 deg but uneven ripening occurred. Fruit firmness decreased greatly during storage at 8 deg for 2 weeks, reaching extreme softness after a further week at 20 deg .
