Sweetpotatoes: processing and products.

The results are summarized of 6 years of research by members of the S-161 Technical Committee, which was established in Oct. 1981 to conduct research on the use, nutritive quality and consumer acceptance of sweet potatoes and their products in the USA. Topics covered include postharvest storage of sweet potatoes, improving sweet potato processing operations, development of new sweet potato products and utilizing sweet potato byproducts.
