Use of lysophosphatidylethanolamine, a natural lipid, as an acid for fruit ripening and improving keeping quality.

A preharvest spray of a solution of lysophosphatidylethanolamine (LPE; 100 p.p.m.), with 1% ethanol, was applied to cv. McIntosh apple trees one week before harvesting and storing in the dark at 3 deg C. A marked increase in peel anthocyanin content and a higher degree of firmness after storage for 5 months were found after treatment. Postharvest application of LPE resulted in higher ethylene production and a lower respiratory rate than in control apples, but the desirable effects of the LPE treatment were not affected adversely by the relatively high ethylene concentration during storage.
