Influence of the post-harvest operations on the milling quality of rice.

Rice cv. CRM 13-3241, Bala, Jaya, Pankaj, Ratna and Jayanthi grown at Kharagpur in the wet season were harvested at a 22-25% grain moisture content and given 8 different postharvest treatments. Grain yield was highest in Pankaj, and higher in Jaya than in the other 4 cultivars. Head yield (whole undamaged milled grains as a percentage of unshelled rice weight) was highest with immediate threshing followed by sun or oven drying to 13% moisture content. One-day field drying before threshing, or 1-2 d field drying followed by 2 d stacking, decreased the head yield due to the development of grain fissures. Head yield was lower after sun drying than after oven drying. Total mill yield (weight of milled rice compared to unshelled rice) did not differ between cultivars, but head yield was highest in Pankaj and Jaya. These cultivars were the least affected by field drying and stacking.
