The effects of precooling and increased atmospheric concentrations of CO2 on fruit quality and postharvest life of strawberries.

Fruits of 15 strawberry cultivars were picked at 2 different stages of maturity, precooled or not, and stored for 5 or 7 days at 0 deg or 20 deg C with 10 or 20% CO2. Data are presented on fruit size, chemical composition and storage quality. The relationship between harvest maturity stage and market quality was unclear. Precooling reduced loss of aroma and quality. Increased atmospheric CO2 was associated with excellent control of storage decay caused by Botrytis and Penicillium species and it slowed down the fruit metabolism, thus preserving aroma and quality.
