Postharvest physiology of fruits of 4 plum (Prunus sp.) cultivars stored under different conditions.

Fruits of the cultivars Roxa de Delfim Moreira, Rainha-Claudia [Reine Claude], Kelsey and Santa Rosa harvested at the green-mature stage were held in a ripening chamber at 20 deg C and 95% RH. These cultivars, except Santa Rosa, were also held in ambient conditions at 25 deg and 60% RH. All fruits, held for up to 11 days, were assessed daily for total acids, pH, TSS, texture, soluble and total pectin content, total reducing sugars, fructose and total phenolics. Variations in fruit respiration were also determined between 20 and 220 h after harvest. The data showed generally an absence of the climacteric peak and abnormal ripening in all cultivars under these conditions, except for Santa Rosa fruits which had a climacteric peak and showed normal ripening characteristics.
