The effects of acid water treatment on fruit growth and quality in apple and Japanese persimmon.

Spraying immature persimmon cv. Hiratanenashi fruits with water at pH 1.5 caused them to drop immediately, while treatment at pH 2 decreased growth. In apple cv. Starking Delicious, treatment of immature fruits with acid water had little effect on growth. Water of pH 2 or less caused surface injury in apples and calyx injury in persimmons. In persimmons, acid spraying had little effect on flesh firmness, Brix or soluble tannin content. Maturing apple fruits apple showed necrotic brown lesions and persimmon fruits showed calyx necrosis and surface cracking with sprays of pH 2 or less. With postharvest dips at pH 3 or less, mature persimmon fruits showed surface injury.
