Recent developments on tomato fruit softening.

The economically most important and well studied area of cell wall biochemistry in relation to texture and food quality is the softening that accompanies tomato fruit ripening. Tissue softening is thought to occur as the structural integrity of the wall is modified during ripening. Thus, an understanding of the dynamic nature of plant cell wall structure and metabolism is essential for controlling the deleterious textural changes that occur after harvest. This review describes recent approaches and results on tomato fruit softening along these lines and suggests that mechanisms regulating the net loss of cell wall neutral sugar components, hemicellulose modifications, wall biosynthesis, and non-enzymatic pectin deaggregation may be of importance in understanding the fruit softening process.
