Tomatoes for processing in the 90's: postharvest handling.

The factors affecting product loss and the quality of processing tomatoes are reviewed with particular reference to the increasing mechanization of picking and postharvest procedures. In 1988 and 1989 a research project ran for the whole harvest period (Aug.-Sep.) in the Vegas del Guadiana area of Spain. The parameters studied were the height of fruit fall from the picker/loader to the container; damping effect of various container bases; depth of load in the containers; transportation distance; period of time elapsing between harvesting and canning; and influence of cultivar (H9889, UC82, Rio Grande and Yuma). The recommendations included improved drainage of the gondolas (bulk containers with a capacity of 12000-14000 kg) and design of a loader-filler shaped at the top to minimize the height of free-fall into the containers. The type of container base (steel, or lined with foam) had no effect on fruit damage. There was wide variability in the results and the cultivar had a significant effect.
