Mass transfer from 'D'Anjou' pears in CA storage.

Fresh 'd'Anjou' pears were stored in bulk in a controlled atmosphere environment to determine the mass loss rate and overall transpiration coefficient. Effects of the cool down period on mass loss and effects of the daily defrost cycle on the environment and fruit were also analyzed. Results presented are from the 1990-1991 and 1991-1992 storage seasons. Mass loss rates of 2.09 and 7.84 mg/kg.h, and transpiration coefficients of 0.36 and 0.34 mg/kg.s.kPa were observed, respectively, for the two test periods. Daily defrost cycles, during which the evaporator fans were off and the coils were electrically heated to melt accumulated ice, caused condensation to accumulate on the fruit.
