บทคัดย่อ

Spectral imaging techniques for food quality evaluation Machine vision, spectroscopy and spectral imaging are potential fields of research for studying the external and internal properties of food products. This article reviews applications of these techniques in quality and safety evaluation, classification and sorting of food materials, and fruits and vegetables. Recent developments of imaging systems are discussed with emphasis o­n the use of multispectral and hyperspectral imaging for modern food inspection.
