Growth of spoilage mould and aflatoxin B1 production in naturally contaminated or artificially inoculated maize as influenced by moisture content under ambient tropical condition.

Maize (cv. TSZB) samples were adjusted to different moisture contents of 13, 15, 17, 20, 25, 30 or 35% and stored with the natural microflaro or sterilised before artificial inoculation with either single or mixed cultures of Aspergillus flavus, A. niger,Penicillium purpurogenum and Fusarium moniliforme, and evaluated for initiation time for moulding. Fungal populations and AFB1 production. Among the different moisture contents, only those at greater than or equal to 20% showed AFB1 levels of more than 20 ug/kg. At 25% moisture content, the AFB1 content of maize increased with the increase in inoculum concenration of A. flavus. Mixed mould inoculation of samples resulted in a reduction in aflatoxin concentration with co-cultures of A. flavus and P. purpurogenum showing the lowest producton, while that inoculatec with A. flavus alone exhibited the maximum production.
