Characterization of Nectarine and Peach Cultivars to Modified Atmosphere Packaging

Peaches and nectarines stored at low temperature develop symptoms of mealiness and flesh browning after ripening at high temperature. Modified atmosphere packaging ( MAP) was evaluated as alternative to commercial perforated bag on four peach and two nectarine cultivars stored for 30 and 40 days at 0ฐ C plus a period of ripening.Combinations of high CO2 (10-15%) low O2 (2-1%) , medium CO2 (8-10%) and medium O2 (6-8%) , low CO2 (6- 10%) and high O2 (9-13%) was attained using different box liners. Different susceptibility to mealiness and flesh browning was identified among cultivars.Five varieties developed mealiness and flesh browning symptoms, two of them were less susceptible to flesh browning, only one variety was free of symptoms in the period of evaluation.MAP system with high CO2 and low O2 was more effective to reduce physiological disorders than other combination. Browning symptoms was easier to control than mealiness, however MAP was effective to reduce both, browning and mealiness symptoms in only one variety.
