Dried longan production in factories.

A dried longan (Dimocarpus longan) production facility was designed for an integrated food factory in China which would replace traditional drying methods. The major operating procedures for the new technology are: pre-treatment of raw materials, cleaning and washing, de-waxing by chemical methods, preliminary drying, moisture regaining, grading, second drying, cooling, packaging and storage. The key equipment is a steam drying room. The key points of the technology are chemical dewaxing and the control of drying time and temp. A simplified method was used to calculate the drying process which is relatively complex. The dried longan produced using the new technology is superior both in appearance and quality to the dried longan obtained with traditional technology.
